Lê Quốc Việt đã trải qua những năm tháng hình thành từ 7 đến 17 tuổi tại một chùa ở tỉnh Thanh Hóa. Tại đây, Việt vừa học thư pháp truyền thống, vừa nghiên cứu Phật giáo, đồng thời tự học Hán văn và Sanskrit từ các kinh sách cổ.
Ngày nay, Việt là một trong số ít người có khả năng đọc và viết chữ Nôm, chữ viết truyền thống của Việt Nam. Việt là người sáng lập Zenei – Nhóm Ngũ Thư Pháp, gồm năm nghệ sĩ/học giả trẻ thành thạo cả Hán văn lẫn Nôm, chữ viết gốc của Việt Nam.
Lê Quốc Việt là một nghệ sĩ tri thức được công nhận, sáng tác trên nhiều chất liệu đương đại: hội họa, sắp đặt, trình diễn, bên cạnh các kỹ thuật truyền thống như khắc gỗ, mực Tàu, giấy dó thủ công và các hình thức nghệ thuật Việt Nam truyền thống khác. Trong những năm gần đây, Việt tích cực tham gia công việc thư pháp tại nhiều chùa ở Việt Nam đồng thời tiếp tục sáng tác và nghiên cứu về thư pháp và Phật giáo. Việt đã triển lãm quốc tế từ năm 1999 và vẫn tiếp tục trưng bày tại Việt Nam và trên thế giới.
Các tác phẩm của Việt hiện có trong bộ sưu tập thường trực của: British Museum (London), American Museum of Natural History (New York), Singapore Art Museum, Asian Civilization Museum (Singapore) và Heide Museum (Melbourne, Australia).
